About One More Ramen
One More Ramen is a curated selection of good ramen houses, organized by city. The idea is simple: when you arrive somewhere new, on a trip or in your own city, you shouldn't have to waste time cross-checking reviews, photos and blogs to find out where to eat well. That work is already done. Every house on the list has cleared dozens of quality criteria, so you can pick any one of them with confidence.
It's not a ranking. There's no first, second or third place: the houses in a given city are equals; they all cleared the same quality bar. Because the best ramen isn't a title: it's what you eat at the right moment, on the right trip, with the right hunger.
The first bowl
I'm Felipe, and it all started over lunch with my son. It was a Saturday in 2022 when I took Davi to try ramen for the first time, at a small restaurant in downtown Curitiba. For me it was just another new experience; for him, it was almost like stepping into a Japanese anime. He'd seen those big bowls in cartoons so many times, and now, at last, he had one right in front of him. After wrestling a bit with the chopsticks, he won, and at the end came the question that started it all: “Can we come back here another day?” We came back. And then we went to another, and another. Suddenly, a few bowls in, we had a clear goal: to find the best ramen in Curitiba.
My wife, Michelle, never got very excited about this culinary adventure. That same Saturday she met us at the restaurant, looked at the egg bobbing in the broth, took a small taste and said, “I'd rather have a breaded steak” (laughs). I started digging through blogs, reviews, photos and lists; we found a post with a selection of ramen houses in Curitiba and decided to try them all. And the more we tasted, the pickier we got. Having ramen on the menu wasn't enough. We wanted a flavorful broth, well-made noodles, chashu made with care; I wanted to feel that “punch” of flavors, aromas and textures.
How One More Ramen was born
That's when I noticed something else. When I travel, one of the things I love most is hunting for good ramen. But choosing a restaurant in a city you don't know is an enormous amount of work. I'd spend a good while cross-checking reviews, photos, blogs and comments, trying to find out where it was really worth eating. And when you're traveling, there's rarely a second chance: one dinner, one place, one bowl. I began to wish for something very simple: that someone had already done this work for me. That someone would say: “Pick any of these places; they're all good.”
That wish is where One More Ramen came from. Not to build a ranking or say which ramen is better than another; that's far too personal. What's perfect for me may not be for you, because there's a best ramen for that moment, that trip, that circumstance.
One More Ramen is a selection, not a competition.
Since I couldn't visit every ramen house in the world myself, I built a method to do much of the work I was already doing on my trips: research, cross-check reviews and weigh dozens of criteria to identify the places that truly take ramen seriously. Artificial intelligence helps with that, but the goal is simple: filter out the noise and hand you a list you can trust. I want One More Ramen to help you have a meal to remember and, when you're traveling, to be that place where you glance at the list and think: this is where I'm having a good bowl of ramen today.
Where the name came from
The name came from the phrase that kept repeating. Every good bowl ended the same way: someone wanting to come back, wanting one more. It was like that from the start — Davi, still wrestling with the chopsticks that first Saturday, already asked, “Can we come back here another day?” And traveling, it was always the same: there was always one more place to try, one more bowl worth the detour. One day it clicked that this was the whole spirit of it — and the name came with it: One More Ramen. One more bowl. Always one more.
The search goes on
I've been to more than 40 restaurants, across 8 cities and 4 countries. On one trip to São Paulo I had three bowls of ramen in two days, and could have had more. Some were incredible; others taught me that fame is no guarantee of a good bowl.
Davi now has his own favorite and would rather always go back to it. But when we travel together, he's still my partner in the search. In Curitiba, some restaurants already know us: we're that father and son who keep showing up, chatting with the owners, talking to the cooks and, of course, ordering one more bowl. And I keep looking for the best ramen in the world. For now, I already have my favorite. But I won't tell you which one it is. After all, the fun is in the search.
