When it goes wrong
The complaint that keeps coming back in reviews of each ramen house, grouped into categories.
Recurring complaints
Blame the service
Most ramen houses have one complaint that keeps coming back in their reviews. Our reading identified it for 132 of the 233 ramen houses we analyzed, and we grouped those complaints into categories, one per house.
Service leads with 29%: slow, rushed or unfriendly staff, often at peak hours. The bowl itself comes second (20%), mostly broth that some find too salty, too thin or uneven between visits. Then the queue (15%), price and portions (11%) and "it used to be better" after a change of owner or recipe (9%).
Brazil is different. There, the queue is the main complaint for 12 of 26 houses (46%), against 8% elsewhere. Outside Brazil, service and the bowl matter more.
Cleanliness is a small share (5%) but worth knowing: it covers restrooms and, in a few reviews, pests. Delivery problems and other issues, such as parking or cash-only payment, make up the remaining 11%.
A recurring complaint isn't necessarily a reason to skip a place. Many are about things you can plan around, like the queue or busy hours, and even well-liked houses collect one.
Categories are our own grouping of the complaint our reading found for each house, so treat them as a rough map rather than a count of every negative review. Brazil has only 26 houses with a complaint, so its split is less stable than the overall one.
